Fudgey Easter Bunny Brownies
I know Easter typically reminds people of lighter flavors like berries and lemon. But I decided that this Easter, I wanted a gooey chocolate brownie to celebrate! These Easter bunny brownies are rich and chocolatey. I also made this a small-batch recipe, so it is baked in a 9 by 5 loaf tin and makes eight small brownies! There are only two people in my household, so this is more than enough!

Honestly, I wasn’t always a big fan of brownies (I know, and I’m sorry lol). I actually just thought I didn’t like them at all.
Turns out, I just like a very specific KIND of brownie. One that is fudgy, dense, and gooey in the center. And if it is paired with some sort of frosting, even better.
So, these Easter Bunny Brownies embody all of those traits with an added festive flair. I kept the decoration simple so as to make it easy for everyone and even a fun activity for the kids!
This is a small-batch recipe, meaning it makes 8 small brownies instead of a full tray. I did this because I do not need a full tray of brownies. But, you can easily double this recipe to make 16 small brownies or 12 slightly larger ones.
Key Ingredients of Easter Bunny Brownies:
- All-purpose Flour– The cocoa powder is necessary, and be sure to use an unsweetened one. Do not forget to sift it so you do not get large clumps in the batter.
- Dark chocolate chips– For this recipe, I used Lily’s No-Sugar-Added Dark Chocolate Chips. I had them on hand, and I found the slightly bitter taste they gave the brownies to be very nice.
- Butter– I know many brownie recipes are made with oil instead of butter, but the richness that butter gives this recipe is non-negotiable.
- Easter Candies!– Use whatever kind you want! I used the Easter Pastel M&M’s to create little bunnies on top (hense “Easter Bunny Brownies”), but feel free to top them with any Easter candy you want!

Can I use ligh-brown sugar instead of dark??
Yes! Absolutely! The only difference will be a bit less of a caramelized flavor, but use what you have on hand!
Can I double or triple the recipe?
Yes. If you double the recipe, bake it in an 8 by 8 or a 9 by 9 pan instead!
Make Easter Bunny Brownies:
Step One: Make the Whipped Frosting:
- Microwave 1/8 cup of whole milk until warm (do not overheat).
- Add the 1/2 cup of chocolate chips to a bowl along with 1 TBSP of butter. Pour the milk over the chocolate chips and let sit for 3 minutes.
- Once the chocolate chips have melted, whisk the mixture together until you have a silky chocolate ganache, and let chill in the fridge for 20-30 minutes.
- With an electric mixer, whip the chocolate mixture together and slowly add 1/4 cup of powdered sugar until the mixture is light and fluffy.

Step Two: Make the Brownies
To a bowl, add your melted butter, white sugar, and brown sugar, and mix to combine.
Then you are going to mix in the vanilla extract and egg until the mixture is lighter in color.
Finally, add your flour, sifted cocoa powder, and salt.
Only mix the batter until the flour and cocoa powder are JUST combined! Do not overmix the batter.
Once the batter is mixed, fold in the chocolate chips.

Line a 9 by 5 bread loaf pan with parchment paper and add the brownie batter to it.
You will then bake this at 325 degrees for about 20 minutes or until the middle is JUST SET.

Remove the brownies from the oven and let them cool completely before topping them with the frosting. I frost them in the tin, then pop the whole thing in the fridge for 20 minutes. This makes cutting the brownies easier.
Remove the brownies from the tin and cut into 8 equal pieces. I then place an M&M flat in the center of each brownie. Then, place two more M&M’S sideways at the top of the flat M&M’s to look like bunny ears!
I added some green sugar sprinkles and called it a day!

Equipment
- 1 Electric Hand Mixer
- 1 9 by 5 Loaf Pan
Ingredients
Chocolate Frosting
- ½ cup Semi-sweet Chocolate Chips Dark chocolate works as well
- 1 TBSP Butter
- ⅛ cup Whole Milk You can also use heavy cream, or 2% milk.
- ¼ cup Powdered Sugar
Brownies
- 5 TBSP Unsalted Butter, melted
- ⅓ cup Dark Brown Sugar
- ¼ cup White Granulated Sugar
- 1 whole Egg
- 1 tsp Vanilla Extract
- ¼ tsp Salt
- ¼ cup All-Purpose Flour
- ½ cup Unsweetened Cocoa Powder, sifted
- ½ cup Dark Chocolate Chips
- 24 M&M's (for topping)
- Sprinkles (optional)
Instructions
Make the Chocolate Frosting
- In a microwave-safe container, heat the milk for 30 seconds or until warm to the touch. Do not overheat the milk or bring to a boil.
- In another bowl, add the chocolate chips and butter. Pour the warm milk over the mixture and let sit for three minutes. Whisk to combine until it becomes a smooth chocolate ganache.
- Let this chill in the fridge for 20-30 minutes.
- Remove from the fridge, and whip with the electric hand mixer. Slowly add in the powdered sugar and whip for 1-2 minutes or until the frosting is light and fluffy. Set in the fridge until ready to use.
Brownies
- Preheat your oven to 325℉. Line a 9 by 5 bread loaf pan with parchment paper and set aside.
- In a large bowl, add the melted butter, white sugar, and dark brown sugar. Whisk until combined.
- Then, add the vanilla extract and egg. Whisk this until it becomes light and a slightly paler color.
- To the butter mixture, add the salt, flour, and cocoa powder, and whisk until JUST combined. Stop mixing as soon as all of the dry ingredients are incorporated.
- Gently fold in the chocolate chips until just combined.
- Pour the batter into the prepared loaf pan, and bake for 20-23 minutes or until the middle has just set. A toothpick can be inserted into the middle, and the brownies are done when only a few wet crumbs come out on the toothpick.
- Let the brownies cool completely at room temperature before decorating.
- Once cooled, spread the chocolate frosting over the top of the brownies while they are still in the pan. Place the pan in the fridge to set for 10 minutes.
- Once cooled, remove the brownies from the pan and cut into 8 equal pieces, wiping the knife off between each cut.
- Finally, top each brownie with 3 M&M's pieces, one flat and the other two sideways to look like bunny ears. Finish off with your choice of sprinkles and enjoy!
