Why Protein Bagels?

 

I find that sometimes, greek yogurt can overpower the flavor profile of a recipe. But in this recipe, you CANNOT taste it!

I first tried protein bagels a few weeks ago, and I was skeptical. But oh how wrong I was! I made an everything bagel version that you should check out if you are looking for a more savory option.

The flavor isn’t actually super similar to a bagel. The tang from the greek yogurt makes it similar, but the texture is different. But in this case, the differences are not a bad thing! I found these to be very light and flavorfull. With 10 grams of protein, these sweet blueberry bagels have become a morning staple for me.

Protein bagels with greek yogurt are super tasty and are worth trying! Plus, you can add things into the dough or different toppings, making this a very versitile recipe. If you aren’t convinced or are looking for a breakfast without greek yogurt, try my high-protein overnight oats!

 

The Base Ingredients for Protein Bagels:

 

  • All-purpose Flour– I personally never have self-rising flour on hand, so that is why I have used AP flour. If you have self-rising, you can use that instead. Just omit the salt and baking powder as the self-rising flour will already have that in it.
  • Greek Yogurt– This is arguably the star of the show. For this, I used non-fat greek yogurt. This packs the most protein with fewer calories than its higher fat counterparts. But if all you have is 2% or 5% fat Greek yogurt, that is also ok.
  • Baking Powder– As this dough does not have yeast, the baking powder is what gives it the rise. Try to ensure the baking powder is relatively fresh for the best results. Baking powder also helps give these protein bagels their classic tang.
  • Salt– No explanation needed. We need salt, and it makes everything taste better.

 

  • Butter– This is the ingredient that sets this recipe apart from others. I found that without some sort of oil or fat, the richness of the bread was a bit lost. If you use greek yogurt with fat or you just want to make a lower-fat version, you can omit this ingredient. In my savory version, I use olive oil.

 

  • Frozen Blueberries– If you have fresh blueberries, you can use those as well! But, I find the frozen have a better texture when baked and are slightly less juciy.

    Can I use a whole egg for the egg wash?

    Yes! Absolutely! The main reason for the egg white is to add a touch more protein and be cost effective. Egg prices are ridiculous right now, so carton egg whites are cheaper than using the whole egg.

    Can I reheat it?

    Yes. You can reheat it in the toaster, toaster oven, or air fryer! I’ve also used the microwave when I was feeling lazy and it worked well enough.

    Blueberry Protein Bagels

    Ingredients
      

    • 1 cup+2 Tbsp All-Purpose Flour*
    • 1 cup Non-Fat Greek Yogurt
    • tsp Baking Powder
    • 1 tsp Sugar I used white sugar, but you can use any kind you like.
    • 1 Tbsp Unsalted Butter Melted
    • Pinch Salt
    • ½ cup Frozen Blueberries You may use fresh for this recipe, but the bagels may take longer to bake.

    Instructions
     

    • Preheat your oven to 350℉. In a bowl, mix together the flour, sugar, salt, and baking powder.
    • Then, mix in the melted butter and greek yogurt. Mix until there is just a bit of flour left uncombined, then add the frozen blueberries.
    • Knead the dough a few times until it becomes a ball. The dough should be a bit sticky, but if you need to add a bit more flour that is ok.
    • Separate the dough into 4 equal pieces and shape each one into a ball. Using your finger, poke a hole in the center of each ball and stretch the dough to expand the hole a bit. You don't want the hole to be too small as it will close as the bagels cook.
    • Lay the dough onto a parchment lined baking sheet and let rest for 5 minutes.
    • Brush the tops of the bagels with egg wash and bake for 25-30 minutes. Transfer to a wire rack and let cool for at least 10 minutes before cutting into them.

    Notes

    • *If you are using self-rising flour instead of all purpose, just omit the baking powder and salt and make the recipe as normal.
    • Store in a plstic bag or airtight container for up to 4 days for maximum freshness.
