Preheat your oven to 325℉. Line a 9 by 5 bread loaf pan with parchment paper and set aside.
In a large bowl, add the melted butter, white sugar, and dark brown sugar. Whisk until combined.
Then, add the vanilla extract and egg. Whisk this until it becomes light and a slightly paler color.
To the butter mixture, add the salt, flour, and cocoa powder, and whisk until JUST combined. Stop mixing as soon as all of the dry ingredients are incorporated.
Gently fold in the chocolate chips until just combined.
Pour the batter into the prepared loaf pan, and bake for 20-23 minutes or until the middle has just set. A toothpick can be inserted into the middle, and the brownies are done when only a few wet crumbs come out on the toothpick.
Let the brownies cool completely at room temperature before decorating.
Once cooled, spread the chocolate frosting over the top of the brownies while they are still in the pan. Place the pan in the fridge to set for 10 minutes.
Once cooled, remove the brownies from the pan and cut into 8 equal pieces, wiping the knife off between each cut.
Finally, top each brownie with 3 M&M's pieces, one flat and the other two sideways to look like bunny ears. Finish off with your choice of sprinkles and enjoy!
